@Corjan-Meijerink happy to report that I have drove the same route today, but using Android Auto, and the issue is not present in this case.

Hi, when the highway information in CarPlay is too much, the information window (in black) about rest time/km is not shown.

When you reach the next exit or so, it comes back normal. But it could be for a long time.

I've had this issue a few times now as well. Perhaps the information in the top field can be limited in such a way that the field below it (with the distance and time) remains visible!
Another option is to give limited information until shortly before this point( for example only kilometers) and only then the whole information as in the images. example:
